- Sauté aromatics: Add garlic, onion, and red chilies to the wok, sautéing until fragrant and the onions turn translucent.
- Cook the proteins: Add the cooked chicken (or prawns) and cook until heated through.
- Add eggs: Push the mixture to one side of the wok, pour the beaten eggs into the empty side, and scramble until cooked.
- Fry the rice: Add the cold rice to the wok, breaking up any clumps. Stir-fry until the rice is evenly coated with the oil and mixture.
- Season: Pour in sweet soy sauce, light soy sauce, salt, and sugar. Stir well to combine and let the rice fry for another 2-3 minutes.
- Add vegetables: Toss in the sliced long beans and cook for another 1-2 minutes, just until the beans are tender but still crispy.
- Serve: Garnish with fresh coriander leaves and serve with cucumber and tomato slices on the side.
