Ingredients:

  • 2 cups of leftover rice (preferably a day old for best texture)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 small red chilies, sliced (adjust to heat preference)
  • 1/2 cup cooked chicken (or prawns, optional)
  • 2 eggs, lightly beaten
  • 1/4 cup sliced long beans (or green beans)
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 tablespoon light soy sauce
  • Salt to taste
  • 1 teaspoon sugar
  • Fresh coriander leaves, for garnish
  • Cucumber and tomato slices, for serving

Instructions:

  1. Prepare the rice: If using freshly cooked rice, let it cool completely to prevent clumping. Cold, day-old rice works best for this dish.
  2. Heat oil: In a large wok or frying pan, heat vegetable oil over medium heat.
  3. Sauté aromatics: Add garlic, onion, and red chilies to the wok, sautéing until fragrant and the onions turn translucent.
  4. Cook the proteins: Add the cooked chicken (or prawns) and cook until heated through.
  5. Add eggs: Push the mixture to one side of the wok, pour the beaten eggs into the empty side, and scramble until cooked.
  6. Fry the rice: Add the cold rice to the wok, breaking up any clumps. Stir-fry until the rice is evenly coated with the oil and mixture.
  7. Season: Pour in sweet soy sauce, light soy sauce, salt, and sugar. Stir well to combine and let the rice fry for another 2-3 minutes.
  8. Add vegetables: Toss in the sliced long beans and cook for another 1-2 minutes, just until the beans are tender but still crispy.
  9. Serve: Garnish with fresh coriander leaves and serve with cucumber and tomato slices on the side.
