Nasi Lemak and Sambal Bilis
Nasi Lemak Recipe
Ingredients:
- 2 cups of jasmine rice
- 1 pandan leaf (optional)
- 1 cup of coconut milk
- 2 cups of water
- 1 teaspoon of salt
- 1 small piece of ginger (sliced)
Instructions:
- Rinse the rice under cold water until the water runs clear. Drain the rice.
- In a rice cooker or a pot, add the rinsed rice, coconut milk, water, salt, and sliced ginger.
- Tie the pandan leaf into a knot and add it to the pot if using.
- Cook the rice according to your rice cooker's instructions or bring it to a boil over medium
heat, then reduce the heat to low, cover the pot, and cook for 15-20 minutes until the rice is tender and fragrant. - Once done, fluff the rice with a fork and let it sit for 5 minutes before serving.
Sambal Bilis (Anchovy Sambal) Recipe
Ingredients:
- 1/2 cup dried anchovies (ikan bilis)
- 1/2 cup cooking oil
- 1 onion (sliced thinly)
- 4 cloves garlic (minced)
- 5-6 dried red chilies (soaked in warm water to soften)
- 1 tablespoon tamarind paste
- 1 tablespoon sugar (or to taste)
- 1/2 teaspoon salt
- 1/2 cup water
Instructions:
- In a pan, heat the oil over medium heat. Fry the dried anchovies until golden and crispy. Remove them from the pan and set aside, leaving some oil in the pan.
- In the same oil, sauté the sliced onions and minced garlic until fragrant and softened.
- Blend the soaked dried chilies into a smooth paste using a little bit of water.
- Add the chili paste to the pan with the onions and garlic, and cook for 5-7 minutes until the oil begins to separate from the paste.
- Add tamarind paste, sugar, and salt. Stir to combine and cook for another 2 minutes.
- Pour in water and bring the mixture to a simmer. Allow it to cook for another 5 minutes until the sambal thickens slightly.
- Add the crispy anchovies back into the sambal and stir to coat evenly. Let it cook for another 3-5 minutes.
- Remove from heat and let the sambal cool slightly before serving.
Serving Suggestion:
Serve the Nasi Lemak on a plate, garnished with a boiled egg, cucumber slices, and a side of sambal bilis. You can also add roasted peanuts for extra crunch!
